“carbohydratecore”principle,basedontheideathatagivenfoodcanusuallybe

Theaimofthepresentworkistocharacterisefoodpurchase,storageandconsump-

tioninhouseholdsoftheEnglishnobilitasmajorandnobilitasminorinthelate

MiddleAgesandearlymodernperiod.Asstatedearlier,noworkwhichundertakes

anin-depthanalysisofthenoblehouseholdinthefifteenthandsixteenthcenturies,

focusingonfoodanddietandtakingintoconsiderationtheimpactofthehumoral

theoryonanEnglishman'sdiet,hasbeenwrittensofar.Thebroadselectionof

documentsthatsurvivefromthefifteenthcenturyonwardsmakessecondaryhistori-

calworkeasierandmoreaccurate.Whatisimportantisthefactthatmanyofthese

documentsaremorecompletethantheaccountsfromearlierperiods.Imadeuseof

awiderangeofprimarymaterialsincludinghouseholdaccountsofvariouskinds,

inventories,ordinancesandotherhouseholddocumentsaswellasrecipescollectedin

manuscriptsandcookerybooks,mostlypublishedintheperiodunderconsideration.

Forthisstudysevenhouseholdaccountsystemswereanalysed,fromdifferenttimes

aswellas,fromdifferentlevelsofsociety,fromgreatlords,suchasRobertDudley,

EarlofLeicester,tolessernobles,suchasSirEdwardDon,andtheirfamilies.

Appendix1includesaselectionofthehouseholdaccountbooksthatwereusedto

performtheanalysisoffoodsprovisionedandconsumedbynoblehouseholdsinthe
