thereformednine-yearprimaryeducationprogramme,butisalsousefulto
awiderpublic.TheSlovenenationalcuisineisthuspresentlydeterminedby
theculinaryheritageofdifferenthistoricperiodsanddefinedsocialenviron-
ments(groups),aswellastheculinarypresent.Thisisbynomeansrestricted
todishespreparedbypeasants,eventhoughthissocialclasswasthemost
importantonerightuptothemiddleofthe19thcentury,whileitsculinary
heritageandtherelatedheritageoffestivitiespassedontomoderntimesan
invaluablerichnessofvariety.
In2006wecarriedoutanextensiveresearchprojectandestablishedthe
GastronomicStrategyofSlovenia.Thebasisofthisstrategywasthedetermina-
tionofgastronomicregionsandtheestablishingofculinarypyramids.Oneofthe
maincriteriaforthedeterminationoftheregionswasthefindingofconcentra-
tionsofculinarycharacteristicsandconcentrationsofcertainlocalandregional
foodsanddishesinparticulargeographicareas.Wetookintoaccountboth:culi-
naryculturalheritageandcontemporaryculinarycreativity
.Wethereforedivided
Sloveniainto24gastronomicregionswith315characteristic,representativeor
corefoodsanddishes.Theselecteddishesdonotreflecttheirpopularity,nordo
theyoccurexclusivelyintheregion.Themaincriterionfortheirinclusionwas
theirgeneralabilitytoberecognized.Individualgastronomicregionsandtheir
inhabitantstendtoidentifywithcertaindishesandthereforethesevirtuallyact
astheirflags.Sloveniancuisinearemeetingplaceofhistoricaldevelopments,in-
terculturalinfluence,localfeatures,andthelong-lastingattachmentofSlovenians
totheirhealthynaturalenvironmentandthefruitsthatityields.Allthesefactors
contributegreatlytothecontinuationofthisrichculturalheritageaswellasto
thecontinuoussearchfornewsolutionsbasedonfirmfoundations.
Theentiresystemsoongeneratedanumberofpositiveeffects,particularly
intheareaofculinaryrecognitionandpromotionfortourismpurposesandin
otherareas.Forexample,knowledgeoflocalandregionalculinaryspeciali-
tiesbecameverypopularintheelementaryschoolsystem,wherethechildren
achieveamazingresultseveryyearinacookingcompetitioncalledCookingand
All,basedondiscoveringculinaryculturalheritage.
Localandregionalculinaryendeavourshavedevelopedverysuccessfully
inthecapital,Ljubljana,andthesurroundingCentralSloveniaregion.In2013
